- Russell Blaikie left the country town of Cowaramup WA for the 'big smoke' of Busselton WA when he was just six years old. The dairy and sheep farm that he was brought up on holds many cherished memories: warm milk on morning cereals, fresh mushrooms picked from the paddocks at dinner and fresh fruits plucked from the trees planted around the farmhouse. Now he is the head chef at Must Wine Bar in Mt Lawley, Perth.
- A different place at any time of the day or week. A quiet coffee in the early afternoon, a glass of Champagne or a cold beer al fresco at 4, a glass of Riesling and some freshly shucked oysters at five, a launch pad for a bigger night out or just a place to meet with friends and relax. You might meet a wine maker proudly pouring their wine behind the bar or Jerry Fraser shucking the freshest oysters he can get his mitts on. It's an ever changing parade.
- To say that Must Margaret River is wine centric is almost an understatement. Bottles of wine snake around the walls and large suspended wine racks create divisions in a warm and moody space. On one side, a bar laden with every type of high quality wine and spirit imaginable and the other, a bistro true to its roots – timeless, classic and comfortable. Upstairs there are three well appointed and spacious suites to rest your weary head.
