The more colourful vegetables are, the better they are for you. Trevor highlights his favourite brightly coloured vegetables.

  • Colourful vegetables contain flavonoids, plant chemicals that generally form as a result of stress or exposure to sunlight.
  • Purple asparagus is a rich source of vitamin E, which is known to be good for hair, skin and eyes. It also helps to build up your body’s defences against infection and disease.
  • If you plant asparagus this autumn, you’ll be harvesting it in 2 years and not this coming spring.
  • Red brussels sprouts are packed with fibre and vitamins. They’re said to be good for gut health.
  • Brussels sprouts grow best in full sun. Planting them in autumn will ensure you have a good crop come late winter.
  • Purple broccoli has highly unusual purple flower heads that are so sweet, you don’t have to cook them. They’re great raw or blanched in boiling water.
  • Broccoli should be planted approximately 50cm apart and in an exposed position. You’ll be harvesting it in 3 months.
