Samphire is a vegetable that has been consumed since the dark ages, but only recently has it made a come back in restaurants around the world.
- There are 6 different types of Samphire in Australia, some are coastal species adapted to salty conditions and others grow inland in drier conditions.
- Because the Tecticornia Pergranulata type is grown in salty conditions the foliage has a crunchy, salty and juicy taste much like asparagus.
- Did you know you can grow Samphire at home? It is not a common plant but you can find it in specialised plant centres.
