The perfect picnic basket

Story Title: The perfect picnic basket
Episode 4: WA's Great Gardens
Date: 24 October 2010
Presenter: Theo Kalogeracos

The best part of a picnic is when someone else invites you and all you have to do is bring the drinks. It's Theo's turn to bring the food so he finds some food inspirations from a local butcher.

Theo's Picnic Ideas

  • Your local butcher can inspire you with practical and delicious meal ideas all made from fresh free-range chicken and the bonus is you will know where your meat comes from.
  • Grant makes a delicious chicken roll stuffed with fresh breadcrumbs and seasoned with just the right amount of salt and pepper. In the roll you will find the best ingredients including, crushed pistachios, sun-dried tomatoes, fresh Plantagenet pork bacon, spring onion and seeded mustard, which makes for a delicious roll filling.
  • “Mount Barker chicken is the best, it's all free range it's open out there without any cages, there is no antibiotics, there are no growth hormones, it's got great texture and you can see it's nearly got a meat texture, it's just beautiful,” says Grant Fraser Corner Butcher Morley.
  • To add some variety to the picnic menu, Grant makes a French garlic sauce with champagne with a touch of Dijon mustard that covers a rich and juicy chicken breast, which can be cooked and cut up into slices fresh rolls or salads.
  • If you are making rolls you can't go without mayonnaise, fresh home-made mayonnaise is easy, only takes a few minutes and I've added some fresh herbs from Swan Valley Nursery which you can grow at home.

Did you know?

  • Mt Barker chickens are only grown in Mount Barker, which is located approximately 400km south of Perth in the pristine Great Southern region.
  • All of Mount Barker chickens are free of added hormones and antibiotic growth promotants, so they are not only fresher and tastier, but also a lot healthier to eat.
  • At Mt Barker, the chickens are free to roam outdoors from dawn to dusk after they have finished brooding. The free-range area has green grass, tree-shelter belts and even dust baths for the chickens to play in.
  • Mt Barker is WA owned and operated and works closely with organisations such as Landcare to help with ecological projects in the Mt Barker area.
  • When choosing chicken look for a pinkish coloured meat and avoid any chicken with a cloudy or watery appearance. Chicken that is watery may have had water added
  •  Mt Barker chickens are grown to the highest welfare and food standards, which ensures you get the highest quality chicken in WA.
