Aside from being one of the most popular soups in the world, Tom Yum Soup has many health benefits.
Tom Yum Soup
Ingredients
- 5 cups of chicken stock.
- 4 stalks of lemon grass cut into thin slices.
- 2 cms of galangal or substitute with ginger, sliced.
- 5 kaffir lime leaves (dried ones are readily available).
- 18 raw prawns shelled.
- 200gms of halved mushrooms.
- 7 fresh chillies sliced.
- 1/3 of a cup of coriander leaves and stems chopped.
- 4 tablespoons of lime juice.
- 1 tablespoon of fish sauce.
- 1 teaspoon of sugar.
Method
- Simmer the prawn shells in a small amount of stock for extra flavour.
- Discard shells and bring stock to the boil, add lemon grass, ginger and lime and lime verbena leaves. Boil for two to three minutes then add prawns and mushrooms.
- When the prawns are cooked (about 1 minute) remove the pan from the heat and add the rest of the ingredients and let it stand for 5 minutes. Serve with coriander.
